BOILED PORK (Southern style)

ingredients: (makes 1 plate)

500 g lean pork shoulder
500 ml coconut juice
1 shallot, crushed
100 g bean sprouts
100 g lettuce and herbs
1 small spoon of salt
150 ml sweet and sour sauce (see sauce A3-II)

1. Chop pork into cubes (5x5 cm), season with 3/4 spoon of salt for 10 minutes and tie it back up with string.
2. Rinse and drain bean sprouts, lettuce and herbs.

Cooking: How to cook BOILED PORK Southern style

1. Bring a saucepan of 500 ml of coconut juice to a boil, add 1/4 teaspoon of salt, crushed shallot, and pork and simmer. When only 1/3 of the coconut juice is left, remove the pork and untie the string.
2. Place bean sprouts, lettuces and herbs on a plate to eat along with the pork.
3. Slice pork into pieces (0.5cm thin) and place onto a plate. Serve cool with bean sprouts, lettuces, herbs and sweet-and-sour sauce.
