BOILED PORK (Central Vietnamese style)

ingredients:(makes 1 plate)

500 g pork side -1 sea crab or 300 g
10 g sugar
2 g chili powder
50 g lettuce and herbs
1 star fruit or 25 g
1 green banana or 25 g
50 ml vinegar
30 ml cooking oil
1/2 shallot and garlic
Fish sauce, salt, and pepper to taste

Preparation: How to prepare BOILED PORK Vietnamese style

1. Cut the pork in half along the grain.
2. Remove crab shell, take out and crush the roe (egg sac), steam the crab without the shell, and shred the meat.
3. Rinse and drain lettuce.
4. Separate wings of star fruit and remove the core. Peel green bananas. Slice banana and star fruit, then soak in salt water for 30 minutes and drain.

Cooking: How to cook BOILED PORK Vietnamese style

1. Boil water with salt (20 g/iiter of water), cook the pork in it, then remove and let cool.
2. Heat cooking oil and stir-fry diced shallot and garlic, put in chili powder and crab meat, add fish sauce, salt, and sugar and stir well. Finally, pour crab-roe and vinegar into the mixture and bring to a boil. Ladle into a bowl and sprinkle with pepper. The pork will be dipped into this sauce.
3. Slice the boiled pork into pieces (0.5 cm thin) and place on a plate. Serve cool with the sauce, lettuce, herbs, star fruit, and banana.
