ingredients: (makes 1 plate)

500 g beef shank
50 ml tuang nep (a sauce made from soy bean and glutinous rice)
5 g sugar
1 g chili powder
1 tomato (or 20 g)
1 each shallot, garlic, and lemon grass
30 ml cooking oil
20 ml fish sauce
Salt and pepper to taste

Preparation:

1. Cut beef into chunks about 3x4x1 cm and season with fish sauce, salt and pepper for 5 minutes.
2. Dice lemon grass, shallot, garlic and tomato.

Cooking:

1. Heat cooking oil to 150°C, stir-fry garlic, lemon grass and tomato until fragrant, and stir in beef. When tomato blends with beef, pour in enough water so that beef is covered, and add tuang, sugar, and chili powder. Bring to a boil.
2. Cover, reduce heat, and simmer. The dish is done when the beef is tender and the gravy covers about one-third of the beef.Ladle onto a plate and serve hot.
