Hotel Vietnam Map

ingredients: (makes 1 plate)

400 g chicken thigh
50 g Chinese black mushrooms
10 g tomato (half of one)
1 bulb each shallot and garlic, diced
30 ml cooking oil
1 bunch coriander - Fish sauce, salt, and pepper to taste

Preparation:

1. Debone and slice chicken into pieces measuring 3x4 cm. Season with fish sauce, salt, pepper, shallot, and garlic for 20 minutes.
2. Remove seeds and finely chop tomato.
3. Soak mushrooms in water so that they expand, remove the stems, and cut larger mushroom into two pieces.

Cooking:

1. Heat cooking oil to 150°C, add prepared chicken and tomato, and stir thoroughly so that tomato blends with chicken. Add mushroom, fish sauce, and salt to taste, add enough water to cover half of the chicken, and bring to a boil.
2. Reduce heat, cover, and braise until chicken is tender, the water left covers 1/3 of the chicken, and there is fat floating on the surface.
3. Ladle chicken and mushroom onto a plate, dress with broth, and sprinkle with pepper and diced coriander. Serve hot.
