BRAISED PORK

(Northern style)

ingredients: (makes 1 plate))

500 g pork side
50 ml fish sauce
1 ml caramel
5 g sugar
2 g ginger
1 shallot, crushed
Salt and pepper to taste

Preparation:

Use pork with a thin skin and not much fat. Chop pork into large chunks measuring 213x4 cm and place in a pan. Season with salt, fish sauce, caramel, sugar, pepper, crushed ginger and shallot for 30 minutes.

Cooking:

1. Heat and stir the pork in order to marinate thoroughly. When the marinade runs out, add some water so that the pork is covered, then bring to a boil.
2. Cover and reduce heat. Simmer for 60 minutes until the pork is tender and the water covers half of the pork.Ladle the pork onto a plate, sprinkle with pepper, and serve warm.
