Hotel Vietnam Map

ingredients: (makes 1 plate)

800 g chicken (preferably a young bird)
100 g bean sprouts
50 g green onion (white round part only)
1 bulb shallot
1 bunch rau ram (Vietnamese coriander)
1 lime and 1 chili
5 g sugar
25 ml vinegar
25 ml cooking oil
Fish sauce, salt, and pepper to taste

Preparation:

1. Dress chicken; remove neck, wings and feet.
2. Rinse and drain bean sprouts.
3. Split green onion and soak in vinegar and sugar.
4. Pick over rau ram. Save 3/4 to add to the chicken and reserve 1/4 for garnish.
5. Remove chili seeds and slice into thin strings.
6. Slice shallot and stir-fry in oil until golden brown and crispy.
