CHICKEN WITH ONION AND RAU RAM (VIETNAMESE CORIANDER)

(Central Vietnamese dish)

ingredients: (makes 1 plate)

800 g chicken (preferably a young bird)
100 g green onion (white round part only)
1 bunch rau ram (Vietnamese coriander)
1 each lime and chili
5 g sugar
Fish sauce, salt, and pepper to taste

Preparation:

1. Dress chicken, remove neck, wings and feet.
2. Split green onion.
3. Snip off the tops of the rau ram, (2-3 cm), set aside, and dice the rest.

Cooking:

1. Boil chicken (see No. 22 "Boiled chicken" for detailed instructions). Remove boiled chicken, let cool and separate the flesh. Shred the flesh into pieces (the same size as the leaves of the Vietnamese coriander), place in a large bowl, and add prepared green onion and Vietnamese coriander. Add salt, sugar, and pepper to taste and squeeze the lime over top and stir well.
2. Place chicken onto a plate and decorate with the tops of the Vietnamese coriander. Serve cool with chili and fish sauce.
