Pork

FRIED MINCED PORK WITH COM (GREEN RICE FLAKES)

(Northern dish)

Ingredients: (makes 1 plate)

400 g pork chops
100 g pork fat
50 g dried com
50 ml fish sauce
Cooking oil (for frying)
Salt, pepper to taste
Fresh banana leaf (cut into 30x30 cm squares) (Or a piece of transparent plastic, used for food preparation)

Preparation:

1. Slice pork into 2x3x4 cm pieces, marinate in fish sauce for 15 minutes
2. Boil the pork fat, dice (0.5 cm3 cubes) and mix with com.
Notes: Com can be replaced with Hill and cooked in the same manner fuse 3 stems of dill).

Cooking:

1. Mince pork for 2 minutes using a food processor.
2. Remove and mix with the pork fat and com mixture, then divide into 2 chunks measuring 5x15-18x2 cm and wrap each half in a banana leaf or plastic wrap. Steam for 2 minutes. This is called steamed pork and com.
3. Wait until the steamed pork and com have cooled off, use a paper towel to absorb excess water.
4. Prepare enough cooking oil for deep frying and heat to 110-130°C. Fry until golden.Slice into 5x 1 x2 cm pieces and place on a plate. 
Serve warm with fish sauce and pepper.
