Ingredients: (makes 100 ml)

100 ml fish sauce
2 cloves garlic
5 g sugar
chili and msg to taste
Preparation:
Remove stem and seeds of chili, cut lengthwise in half, finely chop.
Peel garlic and set aside for 10 minutes, then finely chop (or pound).
Add sugar and msg to fish sauce and stir until blended; then add finely chopped garlic and chili and stir well.

Use:

This is used as a dipping sauce for cha torn (prawn patty), and Hue specialties such as banh bot loc, banh nam and banh la. This sauce is typical of Central Viet Nam; it is hot, salty, slightly sweet, and not sour.
