ingredients: (makes 1 plate)

400 g sirloin beef steak
150 g pork fat
5 g sesame seeds, roasted and pounded
5 g sugar
1 each shallot, garlic, and iemon grass
1 bunch assorted herbs
50 ml cooking oil
Fish sauce, salt, and pepper to taste
150 ml Leo sauce (see sauce A5-II)


1. Cut beef into slices of about 4x6x0.3 cm. Season with fish sauce, salt, pepper, sugar, and cooking oil for 30 minutes.
2. Blanch pork fat and chop into pieces measuring one-third of the size of the beef slices. Mix with fish sauce, salt, sugar, pepper, lemon grass, shallot, garlic and sesame seeds and let marinate for 30 minutes.
3. Use a stainless steel grill.


1. Lay the beef slices flat and place a piece of pork fat onto each slice, folding the two ends up over the fat. Wrap all the beef and pork pieces like this and place them on the grill.
2. Heat a charcoal fire until the coals are red. Brush the meat with cooking oil and turn over as needed so that it doesn't burn. When the beef is golden and fragrant, it is ready.
3. Remove cooked beef from the grill and place on a plate, sprinkle with pepper, and garnish with herbs.Serve hot with Leo sauce.
