ingredients: (makes 1 plate)

500 g sirloin beef steak
1 lime
5 g sugar
100 g raw vegetables (lettuces and herbs)
1 bulb each shallot and garlic, chopped
10 prawn crackers
150 ml cooking oil
Fish sauce, salt, and pepper to taste
100 ml sweet-and-sour sauce (see sauce A3-II)


1. Cut beef into pieces of about 3x3x1 cm. Use a mallet to gently pound the beef to tenderize it. Add fish sauce, salt, pepper, sugar, chopped shallot and garlic, cooking oil. Marinate for 60 minutes.
2. Rinse, drain and place raw vegetables on a plate.
3. Fry prawn crackers in hot oil; remove, and set aside.
4. Use a stainless steel grill.


1. Remove the seeds from the lime and crush half over the beef. Place beef on the grill and brush with cooking oil.
2. Heat a charcoal fire until the coals are red. Turn the beef often to prevent it from burning. Brush cooking oil on the grill from time to time. Beef is ready when it becomes golden and fragrant.
3. Remove beef from the grill and place on a plate. Sprinkle with pepper. Crush the remaining lime half over the beef.Serve hot with raw vegetables, prawn crackers, and sweet-and-sour sauce.
