ingredients: (makes 1 plate)

100 g minced lean pork
1 egg
1 tomato (or 20 g)
1/a shallot
2 stalks each green onion and coriander
Fish sauce and salt to taste

Preparation:

1. Season pork well with fish sauce, salt and diced shallot. Roll into small balls (5 g/ball).
2. Remove tomato seeds and coarsely chop.
3. Beat the egg and add a little salt.
4. Dice the green onion and coriander.

Cooking:

1. Bring 1 liter of water to a boil, add fish sauce and salt to taste.
2. When the water boils again, add the seasoned pork and tomato.
3. After 5 minutes, the pork and tomato should be cooked through. Add the egg, cook 2 minutes, then sprinkle with green onion and coriander and remove from heat. Ladle into 2 large bowls. Served best when hot.
