Hotel Vietnam Map

Ingredients: (makes 1 plate) 

300 g lean beef
1/2 onion (or 25 g)
10 g Chinese black mushrooms
1 bulb each ginger, shallot, and garlic, diced
50 ml cooking oil
1 bunch coriander
Fish sauce, salt and pepper to taste

Preparation:

1. Gently pound beef to tenderize and cut into large cutlets (about 3x4x0.5 cm). Season with fish sauce, salt, pepper, diced ginger, shallot, and garlic for 20 minutes, then add 10 ml of cooking oil and stir well.
2. Slice onions into pieces the same size as the beef cutlets.
3. Soak mushrooms in water so that they expand, remove stems, and cut large mushrooms in two. Rinse and chop coriander.

Cooking:

1. Heat cooking oil to 150-160°C, stir-fry shallot, garlic, and ginger until fragrant, then add marinated beef and stir rapidly. When beef is cooked through, remove from heat.
2. Sautee onion and mushroom using the remaining oil; add fish sauce and salt to taste. When onion and mushroom are cooked through, stir in sauteed beef in and toss well. Ladle onto a plate, sprinkle with pepper and coriander. Serve hot.
