ingredients: (makes 1 plate)

500 g chicken thigh
150 g coconut fiesh
5 g sugar
25 g roasted peanuts
1 stem lemongrass, 1 buib shallot, 1 bulb garlic
1 chili
10 ml tuong nep (a sauce made from soy bean and glutinous rice)
30 ml cooking oil
Fish sauce, salt, and pepper to taste

Preparation:

1. Debone and cut chicken into large, thick pieces measuring 3x4x1 cm. Season with fish sauce, salt, pepper, sugar and tuong nep for 30-40 minutes.
